Instructions:
Pre-cooking Preparation
First make Garam masala using cardamom, cinnamon, cloves, roasted black pepper, coriander and cumin seeds then grind all the ingredients in a powder form.
Then chop all the given vegetables into small cubes, then take a grinding jar fill it with tomato cubes, green chilli , & ginger make a fine paste of these, leave them aside. Wash the jar and blend the shredded coconut with water, make a runny batter out of it.
Cooking
Take an earthen bowl place it on the flames. Pour 3 cups of water to boil all the vegetables together for 6 min, till the tenderness appears. Then separate the boiled vegetables from the water and keep it in a bowl. Then again place the utensil on the flames and pour the tomato paste,pink salt and black pepper into it. Cook it for 4 minutes from low to medium flame. Then add coconut blend into the pot mix them well. Cover the lid and cook for another 5 minutes Then add the boiled vegetables, mix them well and allow the mixture to cook for another 2 minutes. Don’t forget to add the spices like garam masala, chili flakes at this time depending on your taste.
Serve
Garnish the matka sabji with freshly chopped coriander and Serve it.
