Instructions:
1. Wash the samak rice thoroughly and soak it for about 15 minutes.2. Heat ghee in a pan, add cumin seeds, grated ginger, curry leaves, and green chilies. Saute for a minute.
3. Add diced vegetables (carrot, cucumber, and optional potato) and stir-fry for 2-3 minutes.
4. Drain the soaked rice and add it to the pan. Stir gently and sauté the mixture for a minute.
5. Add 2 cups of water, rock salt, and bring to a boil.
6. Cover and cook on low heat until the rice is cooked, and the water is absorbed (about 10-12 minutes).
7. Fluff with a fork, garnish with fresh coriander leaves, and serve hot.
