Pre-Preparation steps
Peel the carrots and steam them in a cooker till 2 whistles. Then blend the carrots into fine paste. At the same time place a pan and dry roast each seeds and nuts individually. Then at last roast the coconut, till golden brown color appear. Set them all aside and take 1 ½ tbsp of them for garnish. After a while grind rest of the seeds, nuts and coconut into nearly fine powders. Take a glass of lukewarm water and mix 3 tsp of jaggery. Stir them evenly for dilution. Mix them all (dry fruit mixer with jaggery water) inside the bowl, and make small ladoos out of it (make them while warm, otherwise they will start to break apart)
Cooking
Take another saucepan pour the milk, and allow it to heat-up. Then add the carrot puree in low flame and mix them evenly. Now add the jaggery powder/ sugar-4 tsp , cardamom powder, blackpepper and mix them slowly with the spoon for 15 minutes. Finally switch off the flame and cool down the kheer.
Serve
Serve the kheer in a cup with a ladoo and some mix seeds to garnish.
